A synthetic emulsifier made by combining propylene glycol with fatty acids. It helps mix fats and water smoothly, improving texture in baked goods, ice cream, desserts, dairy alternatives, and meal replacement products. It also helps whipped toppings and fillings hold their shape. EFSA reviewed it and set an acceptable daily intake of 25 mg per kg of body weight — the same limit as propylene glycol itself, since the body breaks it down into that compound. At typical food use levels, it's considered safe for most people.
