A synthetic emulsifier that helps oil and water mix together in food. Most commonly used in baked goods, cake mixes, and confectionery coatings to improve texture and extend shelf life. Generally considered safe by EFSA and FDA at levels found in food. No significant health concerns have been raised at typical consumption amounts.
