A mineral salt that acts as a leavening agent and acidity regulator. It releases carbon dioxide when heated, helping baked goods rise, and can neutralise excess acidity in food. Approved for very limited use — mainly in dehydrated milk products. Naturally occurring compound, considered safe at authorised levels with no significant health concerns.
