A salt substitute and firming agent used in low-sodium foods, sports drinks, and some processed products. It mimics the salty taste of regular table salt but with less sodium. Generally recognized as safe by FDA and EFSA at typical food levels. At very high doses it can affect heart rhythm, but amounts used in food are far below any concern.
