A mineral salt used as an acidity regulator and firming agent, found mainly in baked goods and some processed foods. It is a synthetic compound derived from aluminium, ammonium, and sulphur sources. EFSA has raised concerns about dietary aluminium intake overall, as aluminium accumulates in the body over time and may affect the nervous system with prolonged high exposure. Authorised in only one food category, so exposure from this specific additive is generally low.
