A strong alkali used to adjust acidity in foods, neutralising excess acids and balancing pH. Found in processed cereals, baby foods, milk-based drinks, and edible caseinates. It is synthetic but breaks down into potassium salts during processing, leaving no active residue in the final product. Generally recognised as safe at permitted levels by EFSA and FDA.
