An alkalinity regulator — essentially ammonia dissolved in water. Used to adjust pH in food processing, most notably in edible caseinates, which are milk proteins used in processed foods. Also known from the controversial 'pink slime' beef processing story, though that use differs from food-grade applications. Generally recognised as safe at permitted levels by EFSA and FDA.
