An alkalinity regulator used in very limited food applications — mainly in flour treatment and certain baked goods. It works by raising the pH of food ingredients, helping control texture and processing conditions. Generally recognised as safe at the low levels used in food. It is a naturally derived mineral compound, essentially quicklime, and breaks down into calcium hydroxide on contact with moisture. Approved by EFSA and used in only one food category, so consumer exposure is minimal.
