A naturally occurring organic acid found in honey, fruit, and wine. Used as an acidity regulator and sequestrant in a narrow range of food products. It helps control pH and can bind metal ions to prevent oxidation. Generally considered very safe — your body metabolises it easily as part of normal glucose breakdown. No significant health concerns have been raised by EFSA or other regulatory bodies.
