An iron salt derived from lactic acid, used as a colour stabiliser in processed vegetables and pickled products. It helps olives and other preserved vegetables maintain a dark, uniform colour that would otherwise fade during processing. Also serves as an iron fortification agent in some foods. Considered safe at authorised levels by EFSA — no significant safety concerns flagged.

This additive is authorised to be used in the following 2 food categories:
