A naturally occurring amino acid found in proteins throughout the body and in many foods like tomatoes, parmesan, mushrooms, and soy sauce. In processed foods it acts as a flavour enhancer, boosting the savoury umami taste. Authorised in very few food categories, so exposure from additives is minimal. Generally considered safe by EFSA and FDA. People sensitive to glutamates may notice reactions, though large studies have not confirmed a clear link.
