A flavour enhancer that intensifies savoury, meaty taste — known as umami. Found naturally in tomatoes, parmesan, and soy sauce. Widely used in fast food, instant noodles, soups, and snacks. Long-standing claims about headaches and nausea ("Chinese restaurant syndrome") have not been confirmed in controlled studies. EFSA and FDA consider it safe at normal dietary levels, though high doses may cause temporary symptoms in very sensitive individuals.
