A flavour enhancer — the ammonium salt form of glutamic acid, closely related to MSG. It intensifies savoury, umami taste in food without adding much of its own flavour. Authorised in very few food categories, so you'll rarely encounter it. Glutamate occurs naturally in many foods like tomatoes, cheese, and mushrooms. Sensitivity reactions are reported by some people, but large-scale evidence for harm at typical doses is weak. Generally considered safe by EFSA.
