A flavour enhancer — the magnesium salt of glutamic acid, closely related to MSG. It intensifies savoury, umami taste in foods without adding its own flavour. Glutamates occur naturally in tomatoes, aged cheeses, and mushrooms. Authorised in very few food categories, so you'll rarely encounter it. Generally considered safe; sensitivity reactions reported by some people are not consistently supported by controlled studies.
