It amplifies savoury, umami taste at lower concentrations than MSG alone, which is why manufacturers often pair it with MSG to cut costs while maximising flavour impact. Found mainly in snack foods, instant noodles, and flavoured crisps. Generally considered safe by EFSA and FDA. People with gout should be cautious — it breaks down into purines, which can trigger flare-ups. Not suitable for infants.
