An amino acid that occurs naturally in the body and in protein-rich foods like meat and fish. Used as a flavour modifier and mild sweetener in tabletop sweetener products, where it helps round out and improve the overall taste profile. Generally regarded as safe at the levels used in food. No significant safety concerns have been raised by EFSA. Because it is authorised only in a very narrow range of products, exposure from food additives is minimal.
