A gas used as a propellant in whipped cream canisters and aerosol food products. It keeps the product sterile and creates that light, airy texture when dispensed. Not a preservative or flavour agent — purely mechanical in function. Generally considered safe at the tiny amounts that end up in food. The main concerns around nitrous oxide relate to recreational misuse, not food use. EFSA has not raised safety concerns for its authorised food applications.
