A natural protein extracted from the West African katemfe fruit (Thaumatococcus daniellii). It's one of the sweetest substances known — roughly 2,000 times sweeter than sugar — but is primarily used in tiny amounts as a flavour enhancer and taste modifier rather than a bulk sweetener. Found in chewing gum, ice cream, chocolate products, and table-top sweeteners. EFSA and FDA consider it safe. Because it's a protein, it's digested like any other dietary protein and doesn't accumulate in the body. No significant health concerns have been raised. A genuinely clean-label option among sweeteners.
