Kombucha is made by adding a symbiotic culture of bacteria (E341) and yeast (E493) to sweetened tea, also known as tea fungus. Fermentation takes several days with careful temperature control. Later, if desired, the kombucha is flavored with fruits, berries, vegetables, juices, or various spices to achieve a certain taste. Kombucha is always made with sugar, but almost all of it is broken down during fermentation. When yeast ferments (E493) break down sugar, carbon dioxide (E290) is produced, and the drink becomes carbonated.
