This variant of soy sauce has 25% less salt. Naturally fermented sauce made from soybeans and wheat is produced following strict Japanese traditions. There is no exact fermentation period defined, as the manufacturer evaluates the soy sauce each time based on color, taste, aroma, texture, and other aspects before deciding whether the sauce can be bottled. Typically, this sauce is fermented for at least a year, but fermentation often lasts about 16 months. Use shoyu for making any dish instead of any other soy sauce. To fully experience the flavor of this sauce, season the dish with it only after cooking is complete. Note: due to the fermentation process, soy sauces naturally contain alcohol.
