Free from soy lecithin. “Alce Nero” chocolates are made from organic cocoa grown in Costa Rica, at the heart of Central America, according to all Fairtrade regulations. Cocoa pods are harvested only when fully ripe. After harvesting, they are opened, and the beans with white and sweet pulp are collected, which later promotes fermentation. The still damp cocoa beans are fermented for several days. Fermentation is the most delicate process: it occurs inside wooden boxes covered with plant fiber bags. This stage is particularly important for the future cocoa aroma; appropriate temperature is necessary to avoid excessive acidity, which can result in unpleasant aromas in the final product. Later, the drying stage takes place - only in a well-ventilated sunny place. This stops the fermentation and slowly reduces the moisture in cocoa beans. After quality inspection, the beans are roasted, which further enhances the aromatic notes. Finally, chocolate is made from them according to an old Swiss chocolate master's recipe. Chocolate production takes place in Switzerland, in one of the oldest factories in Europe.
