The 'Alce Nero' dark chocolate with coffee aroma creates a balanced and refined taste. It contains 36% cocoa. No soy lecithin, gluten-free. 'Alce Nero' chocolates are made from organic cocoa grown in Costa Rica, in the heart of Central America, according to all Fairtrade standards. Cocoa pods are harvested only when ripe. After harvesting, they are opened and the beans with white and sweet pulp are collected, which later encourages fermentation. Still moist cocoa beans are fermented for several days. Fermentation is the most delicate process: it takes place inside wooden boxes covered with plant fiber bags. This stage is particularly important for the future cocoa aroma; a suitable temperature is necessary to avoid excessive acidity, which can cause unpleasant aromas in the final product. Later, the drying stage occurs – only in a well-ventilated sunny place. This stops fermentation and slowly reduces moisture in the cocoa beans. After quality inspection, the beans are roasted, which further enhances the aromatic notes. Finally, they are made into chocolate according to an ancient Swiss chocolate masters' recipe. The chocolate production takes place in Switzerland, in one of the oldest factories in Europe.
