It has a mild dairy flavor with a slight acidity. Usually eaten alone, but sometimes used for making quesadillas or focaccias. Delicious spread on bread. Its name derives from the Lombard adjective strach, which means 'tired'. Legend has it that the cheese was created upon noticing that the milk from 'tired' cows traveling up and down the Alps is more acidic.
