True Silician high-quality cold-pressed extra virgin olive oil is obtained directly from olives and only through mechanical means. The oil is pressed in the producer's own mill no later than 4 hours after the olives have been handpicked. Acidity - only 0.17% (max. standard 0.8%, for very good oil - max. 0.3%). Peroxide content - 8.2 meq/kg (max allowable 20 meq/kg). Polyphenol content after pressing - 346 mg/L (it is considered that the oil has a high polyphenol content if its concentration is not less than 250 mg/L). Aroma - broad and enveloping, with hints of herbs and freshly pressed olives, along with notes of artichokes and tomatoes. The taste is well balanced, featuring the medium intensity bitterness and spiciness characteristic of olive oil, with aftertastes of almonds, artichokes, and green tomatoes - appealing to both olive oil connoisseurs and gourmets. Because of its strong yet wonderful and elegant taste, this oil is perfect for enhancing a variety of dishes - from grilled meats to simple vegetable soups. Try it on pizzas just out of the oven, or on hot bean soups. It is important to mention that during the production of extra virgin olive oil, the temperature during pressing is controlled and does not rise above 27 °C.
