French "Reblochon" cheese is a soft, ripe product traditionally made from raw cow's milk. The best milk for producing this product comes from the Montbellyard, Tarentaise, and Abondance cow breeds. The cheese is aged for four weeks in caves or humid stone cellars and washed with whey every two days, resulting in a brown rind with a thin layer of white mold. This cheese has a protected designation of origin from the Haute-Savoie region of France, located near the Alps.
