The green tea provides a light bitterness, while the elderflower adds freshness and floral notes. During the fermentation process, a tart yet pleasantly balanced flavor develops. Unpasteurized. Kombucha is made by adding a symbiotic culture of bacteria and yeast (SCOBY), also known as the tea fungus, to sweetened tea. Fermentation lasts several days under carefully controlled temperature. Later, if desired, the kombucha is flavored with fruits, berries, vegetables, juices, or various spices to achieve a certain taste. Kombucha is always made with sugar, but almost all of its quantity is broken down during fermentation. When yeast enzymes break down sugar, carbon dioxide (E290) is produced, and the drink becomes carbonated.
