"True Silician" highest category, cold-pressed extra virgin olive oil is obtained directly from olives and only by mechanical means. The oil is pressed at the producer's own mill no later than 4 hours after hand-picking the olives. Acidity - only 0.17% (max norm 0.8%, very good oil - max. 0.3%). Peroxide value - 8.2 meq/kg (max permissible 20 meq/kg). Polyphenol content after pressing - 346 mg/L (it is considered that oil has high polyphenol content if concentration is not less than 250 mg/L). The aroma is broad and enveloping, with hints of herbs and freshly pressed olives, together with notes of artichokes and tomatoes. The taste is well balanced, expressing the characteristic bitterness and spiciness of medium-intensity olive oil with undertones of almonds, artichokes, and green tomatoes – it will appeal to lovers of good olive oil and gourmets. Due to its strong, yet wonderful and elegant flavor, this oil is perfect for enhancing various types of dishes – from grilled meats to simple vegetable soup. It is important to note that during the production of extra virgin category olive oil, the temperature during pressing is controlled and does not rise above 27 °C.
