The varieties of olives used for this product grow in Italy: Castelvetrano, Nocellara del Etna, Peranzana, and Leccino. Castelvetrano or Nocellara del Belice olives are grown in the Belice Valley of Western Sicily. They are large, soft, and delicately flavored. They have fruity and even pleasant buttery aftertastes. Nocellara Etnea green olives pleasantly smell of tree leaves, almonds, even artichokes, and green tomatoes. Fruity, slightly sweet, and lightly bitter. Peranzana olives are dark brown with violet hues. A fairly firm texture, pleasantly smelling of fresh fruits. The taste resembles fresh herbs and artichokes. Leccino are small dark brown olives, quite mild in flavor, with a hint of bitterness.
