"Beemster" Dutch pasteurized goat's milk cheese BEEMSTER, aged for 4 months, is ivory-colored, with a pleasant texture, milky flavor, and slightly sweet hard cheese. It has visually noticeable small irregular holes. It can become an excellent introduction to goat cheeses, as it has a rather subtle flavor. It pairs well with a wheat roll, cashew nuts, and wildflower honey. It is delicious for enhancing pasta, salads, and soups. The goats from which the cheese is made graze in the polders. This is a drained and embanked low-lying area in a lake delta. The milk of goats grazing in such periodically flooded areas has a distinctive flavor. It is produced in the Beemster Polder region of the Netherlands according to an old recipe. The curd mixing is done by hand. These cheeses have holes that appear due to carbon dioxide released during production. You may also notice small crystals in the brine that form as it ages.
