'La Tosi' pasteurized cow's milk blue cheese GORGONZOLA PICCANTE DOP, aged for 3 months, has a rough grayish-pink rind. Inside it is creamy, with visible mold veins. It has an intense flavor, somewhat spicy and salty. It is perfect after a meal or with meat dishes and vegetables. Gorgonzola is an Italian blue cheese made from unskimmed cow's milk. It is believed to come from the city of Gorgonzola in Italy, now produced in Piemonte and Lombardy. Blue cheese is obtained when mold Penicillium roqueforti (E239) is added to the curd formed during production. During the aging of the cheese, it is pierced with stainless steel rods to encourage oxygen transfer and the formation of mold. It has a DOP (Denominazione d'Origine Protetta / Protected Designation of Origin) label, which is granted to products whose quality and characteristics are essentially attributable to their place of origin and geographical environment.
