“Marcel Petite” unpasteurized cow's milk cheese COMTE ST ANTOINE AOC, matured for 10–14 months, is a hard cheese with a brown edible rind and a light creamy yellow interior. It has a mild flavor, creamy texture, slightly sweet, with hints of fruit and nuts. Fine crystals formed during maturation can be felt. It pairs excellently with meat, eggs, or vegetables, suitable for seasoning soups and rice, and can also be used in preparing pancakes or fritters. Delicious to taste on its own or with honey, nuts, and dried fruits. Fat content is 50%. It carries the AOC (Appellation d'Origine Contrôlée / Protected Designation of Origin) label, awarded only to products whose quality and characteristics are uniquely dependent on their place of origin, with the name including a geographical locality. All production stages of the product (from raw material production to processing) must be carried out in that locality. Comté cheese can only be made in the Franche-Comté region.
