“Alce Nero” organic milk chocolate with hazelnuts. Contains 36% cocoa. No soy lecithin, gluten-free. “Alce Nero” chocolates are made from organic cocoa grown in Costa Rica, in the heart of Central America, according to all Fairtrade regulations. Cocoa pods are harvested only when fully ripe. Once harvested, they are opened, and the beans are collected with a white, sweet pulp that later promotes fermentation. The still moist cocoa beans are fermented for several days. Fermentation is the most delicate process: it takes place inside wooden boxes covered with plant fiber bags. This stage is especially important for the future aroma of cocoa; the correct temperature is crucial to avoid excessive acidity, which can lead to unpleasant aromas in the final product. The drying stage follows – only in a well-ventilated sunny location. This halts fermentation and gradually reduces moisture in the cocoa beans. After quality inspection, the beans are roasted, further enhancing their aromatic notes. Finally, chocolate is produced according to an old recipe of Swiss chocolate masters. The chocolate is made in Switzerland, in one of the oldest factories in Europe.
