Ingredients

"Carozzi" goat cheese with blue mold CAPRIZIOLA, aged for 70 days, has an intense flavor, is slightly salty, and has a hint of bitterness. It has a pink rind, is without holes, but shows greenish-blue mold 'veins'. The earthy notes of goat milk are perfectly balanced with the strong flavor of the cheese. It is ideal for preparing various snacks and salads with walnuts. It is especially delicious when eaten with bread and a drizzle of honey. You can also use it in the preparation of soups, pasta dishes, and sauces. Blue mold cheese is produced by adding the mold Penicillium roqueforti (E202) to the curds formed during production. While aging, the cheese is pierced with stainless steel rods to encourage oxygen transfer and mold development.
