Ingredients

The cheese named 'Abondance' (abundance) gets its name from the Abondance valley in Haute-Savoie, where the monks of the Abondance abbey began producing cheese in the fifth century. They also bred cows. In 1381, the 'Abondance' abbey was elected as the official cheese supplier to the table of the conclave gathering to elect the pope. More than 1500 kilograms of 'Abondance' cheese were sent to Avignon. At one time, this cheese even served as a monetary coin. Since 1990, 'Abondance' cheese has been protected by an AOC certification and is now produced on 60 farms. It is made year-round but is considered best from summer milk. There are 35 'Abondance' cows on the farm. These cows are small, brown, with a patch around the eyes, adapted to life in the mountains.
