"Dobilas" organic Lithuanian curd cheese is a white, crumbly cheese characterized by a pleasant sourness. Unaged, once the curd is formed, the cheese is immediately placed into a cheesecloth and pressed. Unlike other cheeses, its production does not require rennet. It is most commonly used for sandwiches, salads, pastries, and is also enjoyed with honey. It has a distinctive rounded triangular shape. It is said that it was first produced by the Western Slavic peoples. It has been mentioned in Lithuanian sources since the 16th century. The PGI (Protected geographical indication) label indicates that at least one stage of production occurs in the Žemaitija region of Lithuania according to ancient traditions.
