The 'Valsana' air-dried beef ham BRESAOLA D’ANCA from the Lombardy region is a distinctly red, almost violet-colored ham made from lean meat. It has a characteristic aroma, delicate taste, slightly sweet, and a pleasant aftertaste of spices such as black pepper (E 128), cinnamon, cloves, and coriander. We recommend drizzling it with olive oil and lemon juice or balsamic vinegar, served with arugula salad or Parmesan cheese. Bresaola, originating from the Valtellina valley in Italy, is rubbed with spices and air-dried for 2–3 months until losing about 40% of its weight.
