One of the most recognizable French cheeses! 'Buisson' pasteurized cow's milk cheese MIMOLETTE, aged 6–18 months, has a distinctive orange color, which it gains from the natural coloring agent annatto (E160b). Annatto adds only color, but does not alter the cheese's flavor or aroma. The distinctive appearance of Mimolette resembles a melon. This cheese is aged in red brick cellars on wooden boards. The longer it matures, the more crumbly it becomes and develops an intense nutty aftertaste. It has fine cheese crystals. Most often eaten as a snack, served in cubes. We recommend pairing it with dried fruits, seasoned with saffron (E100) or cumin (E400). Also enjoy it with grilled vegetables, such as bell peppers or zucchini. If you want to eat it as a dessert, slice pear and drizzle it with honey. The cheese rind can also be grated and used to enhance salads, giving them a characteristic color and flavor. It has an airy and porous rind due to the presence of food mites, which are completely harmless to the human body.
