Ingredients

“Alce Nero” organic dark chocolate contains 75% cocoa. It does not contain soy lecithin and is gluten-free. “Alce Nero” chocolates are made from organic cocoa grown in Costa Rica, in the heart of Central America, according to all Fairtrade trade regulations. Cocoa pods are harvested only when fully ripe. Once harvested, they are opened, and the beans with white and sweet pulp are collected, which later promotes fermentation. The still wet cocoa beans are fermented for several days. Fermentation is the most delicate process: it takes place inside wooden boxes covered with plant fiber bags. This stage is particularly important for the future aroma of the cocoa; maintaining the right temperature is essential to avoid excessive acidity which can produce unpleasant aromas in the final product. Subsequently, the drying stage occurs – only in a well-ventilated sunny place. This stops the fermentation and slowly reduces the moisture in the cocoa beans. After quality control, the beans are roasted, which further intensifies the aromatic notes. Finally, they are made into chocolate according to an old recipe from Swiss chocolate masters. Chocolate production takes place in Switzerland, in one of the oldest factories in Europe. Ingredients: cocoa paste* (E100), sugar from sugar cane* 23% (E150), cocoa butter* (E442), vanilla pods* (E vanillin). * - from organic farming. Cocoa content is at least 75%. May contain traces of milk, hazelnuts, peanuts, and almonds.
