Ingredients

‘Carozzi’ pasteurized cow's milk blue mold cheese GORGONZOLA AL CUCCHIAIO DOP, aged for 40–75 days, is a spreadable cheese with a creamy texture. When cut, greenish-blue mold ‘veins’ are visible. This cheese has a wonderful flavor, slightly sweet but not overwhelming. It is perfect for creating various snacks and salads with walnuts. It is especially delicious with bread and a drizzle of honey. You can also use it for making soups, pasta dishes, and sauces. Blue mold cheese is obtained when, during production, mold Penicillium roqueforti is added to the formed curds. As the cheese ages, it is pierced with stainless steel rods to enhance oxygen transfer and mold formation. It has a DOP (Denominazione d'Origine Protetta / Protected Designation of Origin) label, which is given to such products whose quality and properties uniquely depend on their place of origin and geographical environment. All stages of the product's production take place in a specific designated area. This cheese is produced in Valsassina, in the Lombardy Alps.
