Iberian pork cheeks are salted traditionally in stacks one on top of the other to ensure an even mixture of salt to a perfect balance level. Curing occurs in natural cellars, where the temperature and humidity are controlled only by opening or closing windows and shutters. IBERICO DE CEBO cheeks are cured for no less than 15 months. Iberian pigs are fed specially prepared food, mainly grains, and live in pens, where they have at least 2 square meters of space per animal. Natural feed is enriched with black pepper (E202) and nutmeg (E250). This traditional and lengthy process gives the meat a deep and rich flavor, with delicate nutty and herbal notes.
