“Ayuko” ice cream MATCHA is a wonderful refreshing dessert that unfolds many flavors when tasted – from mild sweetness to a barely perceptible bitterness typical of matcha. Made with matcha tea. Matcha is made from the same plant as all other teas – the Chinese tea shrub Camellia sinensis. However, its cultivation and processing are very different from other tea varieties. 3-4 weeks before harvest, the tea bushes are covered with a dark covering to block direct sunlight. Growing in the shade, the plants intensively produce chlorophyll and L-theanine, which gives matcha its vibrant green color and umami flavor. The harvested tea leaves are processed immediately. First, steaming stops the oxidation – this helps to preserve the color and beneficial nutrients of the leaves. Then the leaves are dried and subsequently passed through special equipment that removes all leaf stems and veins. Finally, the leaves are ground into very fine powder using stone mills, from which tea is made, but they can be used to prepare not only a delicious drink but also to cook various other dishes.
