The production of this soft panettone is a long and meticulous process that takes as long as 72 hours. The dough is naturally leavened (sourdough). Before baking, the dough is allowed to rise three times, thus enhancing the flavor and forming the desired texture. The cake is then baked at a carefully controlled temperature, and once baked, it is immediately hung "upside down" to cool. While hanging, the still warm cake stretches and takes on a dome shape.
