"Badoz" unpasteurized cow's milk cheese COMTE AOP, aged for 24 months, is a hard Alpine cheese with a brown edible rind. Inside, it is light yellow in color. Mildly flavored, creamy, with nutty undertones. Also, there may be small crystals formed during aging. 45% fat content. It pairs excellently with meat, eggs, or vegetables, suitable for flavoring soups and rice, and can also be used for baking: when making pancakes, flatbreads, or rolls. Delicious when tasted alone or with honey, nuts, and dried fruits. It has an AOP (Appellation d'Origine Protégée) mark, awarded only to products whose quality and characteristics depend exclusively on their origin, with a geographic term in their name. All stages of production (from raw material production to processing) must take place in that area. Comté cheese can only be produced in the Franche-Comté region from Montbéliarde and French Simmental breeds of cows.
