'Cilento' pasteurized buffalo milk cheese balls MOZZARELLA DI BUFALA CAMPANA DOP are round, white, soft mozzarella balls. This is an Italian cheese with a light milky, slightly sweet flavor, made using the pasta filata method. Fat content is 52% w/w. These cheese balls are made from buffalo milk with a protected designation of origin. The buffaloes graze freely, providing delicious, high-quality milk, which is somewhat thicker in texture than that from other animals and is perfect for dairy product production. It is most commonly used to make pizzas, pasta, salads, especially Caprese, but can be used very widely, for example, in sandwiches, arancini, to prepare cheese sticks, and other dishes. It has a DOP (Denominazione d'Origine Protetta / Protected Designation of Origin) label, awarded only to products whose quality and characteristics are exclusively related to their origin, with the name indicating the geographical origin. All stages of production (from raw material production to processing) must take place in that area. This cheese is made in Campania, Lazio, Apulia, and Molise. Buffalo milk mozzarella is made from Italian Mediterranean buffalo milk. In containers where mozzarella was previously made and where some thermophilic bacteria are remaining, starter lactic acid bacteria cultures are added. Later, rennet is added. When the curd forms, it is cut into pieces. It is then heated to separate the whey from the curd. Once the whey drains, the curd is transferred to a special vessel where a cohesive mass forms. Then the pasta filata process is executed, where the cheesemaker kneads the cheese like dough until a soft, shiny mass is formed. From this, he tears off a piece and shapes it into mozzarella. Net weight without liquid – 300 g. Gross weight – 600 g.
