Ingredients: Naturally fermented 'Clearspring' organic traditional Japanese soy sauce TAMARI has a wonderfully balanced flavor. Naturally gluten-free. Double strength – twice as many soybeans were used for each bottle than for regular soy sauce. Tamari is the original Japanese soy sauce. 'Clearspring' tamari is made by the Yaemon family and has been for six generations. Soybeans, affected by koji culture, are fermented in wooden cedar barrels. At the beginning of the fermentation process, there is a practice called 'kumikake' – mixing the liquid every day for up to 3 months. The total aging time necessarily includes two summers, as fermentation occurs more actively when it is warm (for comparison: regular soy sauce is typically fermented for several months). For over 500 years, the same stones have been used to press the soybeans during fermentation. This provides a distinctive aroma, flavor, color, texture, and umami flavor to the final tamari product. The 500-year-old recipe has been passed down from generation to generation, from father to sons. Yaemon tamari is the only one produced in Japan using these proportions: soybeans – 10 parts, water – 5 parts. This gives an exceptionally deep flavor unmatched by any other tamari produced in Japan. Suitable for nearly all dishes. Excellent for marinating, stews, can be poured directly on fresh vegetables, and is great with sushi. You can use it instead of salt in your favorite dishes. Best used before finishing cooking. Suitable for vegans. This is not an everyday, ordinary tamari; this is Yaemon Tamari. Ingredients: soybeans* 46%, water, sea salt, mirin* (sweet rice*, water, cultured rice*). * – from organic farms.
