Ingredients

One of the most valued cheeses in the world! 'Vivaldi' cheese shavings PARMIGIANO REGGIANO DOP. This Parmesan cheese, aged for at least 12 months, is a hard cheese made since the 13th century. It has a rich, intense flavor that many describe as savory, with nutty, sometimes fruity undertones. It is perfect for making soups, lasagnas, sauces, stews, pizzas, and various spreads. Conveniently pre-grated for you, all you have to do is let your imagination run wild on how to use it! Fresh eastern and western cow's milk is used for making this cheese. About 550 liters of milk are needed to produce each cheese wheel (37-40 kg)! During production, milk slowly thickens, and the resulting curd is crumbled into pieces. Then the cheese is heated to 55 °C, allowing its granules to sink to the bottom of the vat to form a cohesive mass. Later, the cheese is transferred to round stainless steel containers and fastened with a spring clasp to maintain its shape. After a while, the clasp is removed, the name of the cheese is stamped in, and it is fastened again. The cheese is then kept in brine for 20-25 days. Upon salting, the aging process begins on wooden shelves. The cheese is turned weekly and washed along with the shelf. After 12 months, professionals assess whether the cheese is of sufficient quality to be called Parmigiano Reggiano. It bears the DOP (Denominazione d'Origine Protetta / Protected Designation of Origin) label, awarded to products whose quality and characteristics are exclusively linked to their place of origin and geographical environment. All stages of production take place in a specific designated area.
