‘Margot’ unpasteurized cow's milk cheese L'ETIVAZ AOP, aged 5–13 months, has a distinctive, even sharp flavor with subtle nutty notes. Ivory-colored, it has aromas of milk and herbs. The taste of each cheese wheel may vary slightly depending on the cows’ diet. It pairs excellently with walnuts, figs, pears, and other fruits. This cheese is produced in the Alpine environment of Switzerland, in the Vaud canton. Its production takes place exclusively in the summer, by heating the milk in copper cauldrons over an open flame. It bears the AOP (Appellation d'Origine Protégée) label, given only to products whose quality and characteristics are exclusively linked to its place of origin. All stages of production (from raw material processing to processing) must take place in that area.
