It has visually noticeable pieces of truffles and round holes. It is delicious to eat alone or to use as a topping on pizza, omelets, pasta, or ciabatta. The cows whose milk is used to make cheese graze in the polder areas. This is a drained and dike-protected lowland area in a lake delta. The milk from cows grazing in these periodically flooded areas has a distinctive flavor. It is produced in the Beemster Polder region of the Netherlands according to an old recipe. The curd mixing is done manually. These cheeses have holes that develop from carbon dioxide released during production. You may also notice small crystals in the brine that form as it ages.
